4 sweet potatoes peeled and cut into 1 inch cubes

1/4 cup extra-virgin olive oil, plus more for drizzling on potatoes after cooked

1/4 cup Waldbee Honey with Ginger

2 tsp ground cinnamon

salt and freshly ground black pepper

Preheat oven to 375F , Lay the sweet potatoes out in a single layer on a roasting pan. Combine the rest of the ingredients and drizzle over the sweet potatoes. Roast for 25-30 minutes or until tender. Remove from oven and place in serving dish, drizzle with a little more olive oil and serve.

1/4 cup Waldbee Honey with Ginger

3-4 tsp of soy sauce

1-1/2 tsp lemon juice

1-1/4 pounds of boneless skinless chicken breasts, cut into 1/4 inch slices

1/2 tsp salt

1/4 tsp pepper

1 tsp canola oil

1 package (16 oz) frozen stir fry vegetable blend

4 to 6 cups hot cooked rice

In a small bowl, combine the honey, soy sauce and lemon juice, set aside. Sprinkle chicken with salt and pepper. In a large skillet or wok, stir-fry chicken in oil for 3-4 minutes or until slightly browned. Add vegetables, stir-fry 3-4 minutes longer or until vegetables are tender crisp. Add honey mixture and cook for 3-5 minutes or until heated through and the chicken is no longer pink. Serve with rice.
