1 lb pork tenderloin, trimmed
1/2 cup Waldbee Ginger Honey
2 tbsp lemon juice
2 tbsp crushed garlic
2 1/2 tbsp soy sauce
salt and pepper to taste
pinch of cayenne pepper
Pork aside, combine the ingredients and place half the pork tenderloin to marinade for a few hours or overnight. Refrigerate the rest of the marinade.
Preheat the oven to 400F, line baking sheet with foil. Heat a large skillet with olive oil on medium high heat, sear the tenderloin briefly on all sides until golden brown. Transfer meat to baking sheet and roast 10-15 minutes (internal temp. 135F). Brush with remaining marinade and broil for 1-2 minutes till golden. Remove from oven, cover with foil and let rest a few minutes (internal temp. 140-145) Brush with remaining marinade.
