1/4 cup Waldbee Honey with Ginger
3-4 tsp of soy sauce
1-1/2 tsp lemon juice
1-1/4 pounds of boneless skinless chicken breasts, cut into 1/4 inch slices
1/2 tsp salt
1/4 tsp pepper
1 tsp canola oil
1 package (16 oz) frozen stir fry vegetable blend
4 to 6 cups hot cooked rice
In a small bowl, combine the honey, soy sauce and lemon juice, set aside. Sprinkle chicken with salt and pepper. In a large skillet or wok, stir-fry chicken in oil for 3-4 minutes or until slightly browned. Add vegetables, stir-fry 3-4 minutes longer or until vegetables are tender crisp. Add honey mixture and cook for 3-5 minutes or until heated through and the chicken is no longer pink. Serve with rice.
