1 1/4 cup of cornmeal
1 cup flour
1 tbsp. baking powder
1 tsp. sea salt
2 large eggs
1/2 cup Waldbee Cinnamon Honey
1 cup buttermilk
1/2 cup unsalted butter, melted
Preheat oven to 350F. Grease muffin tins. In a large bowl, whisk the cornmeal, flour, baking powder and salt. Then whisk in eggs, Waldbee Cinnamon Honey and buttermilk. Mix butter in last till smooth. Fill tins 2/3 full. Bake for 20 minutes or until golden and inserted toothpick comes out clean. Cool for 2-3 minutes then flip out of tins. Yields 46 mini muffins. These muffins are not too sweet and can be served with dinner.
